All summer people have been asking me if I have a paleo coleslaw recipe and I finally do and its a good one! We were at the Linden Hills Farmers Market on Sunday and bought some Callister Farms brats so I couldn't make brats with no slaw that would be depressing! The big challenge for coleslaw is obviously the mayo. Instead of mayo this recipe uses avocado to get the creamy texture. I honestly think its more refreshing and better than regular coleslaw but make it yourself and let me know!
Ingredients
- 1 bag shredded green cabbage
- 1/2 bag shredded red cabbage
- 2 avocados
- 1 lemon
- 1 lime
- 1/2 teaspoon of crushed red pepper
- 1/2 teaspoon of cumin
- olive oil
- salt and pepper to taste
Directions
- Mix all ingredients besides the cabbage in the food processor until its completely smooth
- Dump cabbage in a bowl and mix in avocado sauce
- Refrigerate until it gets nice and cool
- Enjoy
