Great Summer Recipe: Paleo Coleslaw!!

All summer people have been asking me if I have a paleo coleslaw recipe and I finally do and its a good one!  We were at the Linden Hills Farmers Market on Sunday and bought some Callister Farms brats so I couldn't make brats with no slaw that would be depressing!   The big challenge for coleslaw is obviously the mayo.  Instead of mayo this recipe uses avocado to get the creamy texture.  I honestly think its more refreshing and better than regular coleslaw but make it yourself and let me know!

Ingredients

  • 1 bag shredded green cabbage 
  • 1/2 bag shredded red cabbage
  • 2 avocados 
  • 1 lemon
  • 1 lime
  • 1/2 teaspoon of crushed red pepper
  • 1/2 teaspoon of cumin 
  • olive oil
  • salt and pepper to taste 
Directions

  • Mix all ingredients besides the cabbage in the food processor until its completely smooth
  • Dump cabbage in a bowl and mix in avocado sauce
  • Refrigerate until it gets nice and cool
  • Enjoy
