Must Make Chicken Recipe!!!!

I wanted to make a special dinner for Pete last night because he has been so sweet with me working so much more lately.  (aka lots of salad and chili)  So I found this recipe for Roasted Cardamom, Oregano, and Garlic Chicken Thighs in the cookbook Good Meat and it was AWESOME!!!!!  Not to mention so so easy.   Everyone should make this one night this week to replace their boring chicken recipes.  Trust me you will be thanking me!  I have to confess I never buy chicken thighs but now I will for sure.  They are really tasty and inexpensive.... I paid $4.95 at Whole Foods for 5 thighs.

Roasted Cardamom, Oregano, and Garlic Chicken Thighs
2 tablespoons Cardamom seeds out of the pods.  ( if you can only find them in the pods don't worry they are easy to pop out thats what I did)
2 gloves garlic
1 tablespoon kosher salt
1/4 cup fresh oregano
1/4 cup olive oil
4-6 skin on bone in chicken thighs

Smash the cardamom seeds, garlic, oregano, and salt with a mortar and pestle to make a paste.  Than thin it out with olive oil.  Take the mixture and coat both sides of thighs and marinate in the fridge for 4 hours.  Bake on 450 for 45 minutes.   Put on the top shelf of the oven so the skin gets really crispy.  Enjoy!!!!!
